Lemon & parsley Pan-fried Gurnard Fillets

 Serves: 4      Prep Time: 5mins      Cook Time: 10 mins 

 

INGREDIENTS

 

  • 4 pieces gurnard fillets
  • approx 50g flour for dusting
  • salt and pepper
  • 100g butter
  • small handful of parsley
  • 1 lemon

HOW TO MAKE IT

  1. Place the flour in a bowl. Season the fillets first and coat both sides in flour. Shake off any excess flour and set aside.

  2. Melt 80g of the butter in the frying pan and add the fillets to be pan.

  3. Fry the gurnard fillets for 3-4 mins using a spoon to constantly baste in butter

  4. Turn the fillets over and cook for a further 1-2 mins while continuing to baste with butter. The fish should turn a golden color on each side.

  5. Remove the fish from the pan and set aside on your serving plates.

  6. Add the remaining 20g of butter to the pan until it produces a lovely nutty smell, then add the chopped parsley and a good squeeze of lemon cooking for a minute. 

  7. Turn off the heat and spoon this mixture over the fillets. Enjoy it with your choice of vegetables.
